Banana Pancakes 

Ingredients:

  • 2 ripe bananas

  • 2 tsp baking powder

  • 1 tsp vanilla extract

  • 2 large eggs

  • 4-6 of coconut or almond flour

  • Oil for cooking

Optional Toppings:

  • Berries 

  • Maple syrup (the superior choice)

  • Confectioner’s sugar

Steps:

  1. In a large bowl, mash your bananas with a fork until smooth. Then add baking powder along with vanilla extract then combine. 

  2. Add your eggs then mix in your flour, one spoonful at a time.

  3. Put around 3 spoonfuls of batter on your pan on medium-low heat.

  4. Flip every 3 minutes until both sides are golden brown. 

  5. Serve with your desired toppings and enjoy.

Tip: Put your cooked pancakes into your preheated oven to keep them warm while you cook, like a bunch of warm baby chicks in a basket.

These cool pancakes have a great source of protein, iron, fiber, vitamin A and C along with calcium. A quick breakfast to make before school or when you’re bored and hungry.
