Banana Pancakes
Ingredients:
- 
2 ripe bananas 
- 
2 tsp baking powder 
- 
1 tsp vanilla extract 
- 
2 large eggs 
- 
4-6 of coconut or almond flour 
- 
Oil for cooking 
Optional Toppings:
- 
Berries 
- 
Maple syrup (the superior choice) 
- 
Confectioner’s sugar 

Steps:
- 
In a large bowl, mash your bananas with a fork until smooth. Then add baking powder along with vanilla extract then combine. 
- 
Add your eggs then mix in your flour, one spoonful at a time. 
- 
Put around 3 spoonfuls of batter on your pan on medium-low heat. 
- 
Flip every 3 minutes until both sides are golden brown. 
- 
Serve with your desired toppings and enjoy.

Tip: Put your cooked pancakes into your preheated oven to keep them warm while you cook, like a bunch of warm baby chicks in a basket.
These cool pancakes have a great source of protein, iron, fiber, vitamin A and C along with calcium. A quick breakfast to make before school or when you’re bored and hungry.
